Rutherford Cabernet Sauvignon
Del Bondio Wine Company’s thirty-one acre Cabernet vineyard, in the heart of the Rutherford appellation, is hand picked in the cool of the morning, the fruit is sorted, crushed and cold soaked to allow the skins to soften and release their color and flavor components. The fermentation process lasts an average of fifteen days, at which time the grapes are pressed, allowed to settle for two days, and then placed in aged oak barrels consisting of 60% French oak and 40% American oak.
Tasting Notes
This wine has beautiful, rich, intense, garnet color, with aromas of boysenberries, dark cherries, violets, anise, and a touch of cedar. As the wine touches the palate, it has an intense entry of blackberries and dark cherries, black currant, and anise. Mid -palate there are hints of cinnamon, as well as black olive, hints of black pepper, more of the berry and cherry fruit and dark bittersweet cocoa, with a lingering berry and touch of the Rutherford Dust finish. The wine has a balanced tannin and acidity and a nice mouth feel. This Cab can be equally enjoyed for sipping or with wonderful foods.
